Best Ever Lentil Soup with Lemon and Basil Leaves - vegan gluten free vegetarian quick and easy

Talk to your Middle Eastern friends about it and you’ll learn that everyone has “the best” lentil soup recipe. And don’t you dare challenge them on it! That’s the equivalent of telling an Italian person their nonna’s meatballs are good… but you’ve had better!

I’m told the secret to a fabulous lentil soup is a generous squeeze of lemon before eating. That’s why this recipe is finished with plenty of lemon juice to brighten the flavour and stimulate your taste buds. I’ve also packed in some extra vegetables, as I’ve been known to do ๐Ÿ™‚ That helps make this a complete meal with plenty of fibre and protein to keep you satisfied.

Some quick facts about what makes lentils so healthy:

  • A serving of lentils contains more protein than a serving of yogurt! A ยพ cup serving of lentils provides about 13 grams of protein, making it a full serving of Meat and Alternatives.
  • Some studies have shown that eating pulses such as lentils may improve the bodyโ€™s response to sugar. This is because pulses lower insulin and blood sugar responses after a meal. One study found that lentils not only lower the blood sugar effect from the meal in which they are eaten, but also the next meal eaten four hours later!

Best Ever Lemony Lentil Soup

This warm and cozy lentil soup is packed with flavour and is super healthy thanks to lentils and plenty of vegetables. You can puree it for a smoother, creamier texture or enjoy the chunky bits of lentils, carrots, celery and onion.

Ingredients
  

  • 1 tbsp olive oil
  • large Spanish onion diced
  • 4 cloves garlic minced
  • 3 large carrots diced
  • 3 celery stalks diced
  • 4 cups water
  • 1 cup dried red lentils rinsed
  • 1 tbsp cumin
  • 1 tbsp curry powder
  • 1/4 cup lemon juice
  • salt to taste
  • black pepper to taste

Instructions
 

  • Over medium heat, heat oil in a Dutch oven or saucepan. Add the onions, garlic, carrots and celery. Saute until onions are translucent (about 5 minutes).
  • Add the remaining ingredients except for the lemon juice to the pot. Bring the soup to a boil and then turn it down to a simmer and cover.
  • Let the soup simmer for 30 minutes. If you're using a crockpot, set it for 4-6 hours on low.
  • Remove the soup from the heat and stir in the lemon juice. Serve and enjoy!

Notes

If you like it spicy, add some paprika or hot sauce.
This soup freezes really well. Portion it into shallow containers and let it cool before covering and placing in your freezer.
