Best Ever Lemony Lentil Soup
This warm and cozy lentil soup is packed with flavour and is super healthy thanks to lentils and plenty of vegetables. You can puree it for a smoother, creamier texture or enjoy the chunky bits of lentils, carrots, celery and onion.

- 1 tbsp olive oil
- large Spanish onion diced
- 4 cloves garlic minced
- 3 large carrots diced
- 3 celery stalks diced
- 4 cups water
- 1 cup dried red lentils rinsed
- 1 tbsp cumin
- 1 tbsp curry powder
- 1/4 cup lemon juice
- salt to taste
- black pepper to taste
Over medium heat, heat oil in a Dutch oven or saucepan. Add the onions, garlic, carrots and celery. Saute until onions are translucent (about 5 minutes).
Add the remaining ingredients except for the lemon juice to the pot. Bring the soup to a boil and then turn it down to a simmer and cover.
Let the soup simmer for 30 minutes. If you're using a crockpot, set it for 4-6 hours on low.
Remove the soup from the heat and stir in the lemon juice. Serve and enjoy!
If you like it spicy, add some paprika or hot sauce.
This soup freezes really well. Portion it into shallow containers and let it cool before covering and placing in your freezer.
