Puffed quinoa is my newest obsession. It’s light and fluffy and perfect in energy bites with some nut butter and your favorite mix-ins. I used all of my craving crushers in these Puffed Quinoa Energy Bites with Mango and Almonds with delicious results!
I’m a huge fan of recipes that are no-bake and better yet, don’t require appliances that need to be cleaned (I’m looking at you, food processor).

Thanks to the almond butter and slivered almonds, you’re getting fiber and protein to help keep you satisfied. The dried mango gives you some sweetness and a little bit of fiber.

Click To TweetIf you’re wondering where to pick up puffed quinoa, you can find it at bulk stores such as Bulk Barn in Canada. In the U.S. I’ve seen it at health food stores and in the cereal section of the health food aisle at your grocery store.
If you can’t find puffed quinoa, no worries. Pick up some puffed brown rice and it will work just as well in this recipe.

- 3/4 cup natural almond butter
- 3 tbsp maple syrup (or your favorite sweetener)
- 1 tsp vanilla extract
- 1 cup puffed quinoa
- 1/4 cup slivered almonds
- 3 slices dried mango cut into 1/4" pieces
- In a medium bowl, combine the almond butter, maple syrup and vanilla extract. Stir in the puffed quinoa, almonds and mango.
- Roll into 12 balls about 1 1/2" in diameter. Put them in the fridge for 10 minutes to solidify. Enjoy!
