My clients are always asking me for recipes for a homemade energy bar that’s healthier than store bought. And of course, it has to be delicious! I’ve done it with these lip-smackin’ chocolate almond coconut squares. They taste yummy enough to be a dessert but they’re healthy enough to enjoy as a snack. They’re my new go-to DIY granola bar or energy bar alternative. I love that they’re no bake and super easy.

Another thing I love about these Dark Chocolate Almond bars is they’re both sweet and salty, so  they appeal to all tastes. Isn’t sweet and salty the yummiest combo? And you can feel good about the fact that the sweetness comes from whole fruit: dates! That way you’re getting fiber and other nutrients into your coconut squares.

I first made these dark chocolate almond squares with coconut to bring to a dinner party. They were a huge hit! They’re great for a potluck or party. I also recently made them for my friend’s birthday and she has been politely but persistently reminding me to post the recipe ever since!

This healthier granola bar or protein bar stores easily and keeps well. Just wrap them up in parchment paper or plastic wrap or keep them in airtight containers where they can be in a single layer.

These energy bars will last in the fridge for 3 weeks. Although I’ve never gone that long without eating them all. I’ll be amazed if you do! Let me know 🙂

Dark Chocolate Almond Bars with Coconut - Vegan, Gluten-Free, No Added Sugar!

These delicious no bake bars are the perfect healthy energy bar alternative. They're loaded with filling protein, fiber and healthy fats. And they're both sweet and salty to help you conquer any cravings. Make them for a healthy snack, dessert or potluck!
Servings 12 bars
Prep Time 7 minutes
Total Time 1 hour 7 minutes

Ingredients
  

  • 1 cup almonds raw or roasted, unsalted
  • 1 cup dates pitted
  • 1/2 cup shredded coconut unsweetened
  • 1/4 tsp salt
  • 1 cup dark chocolate chopped into chunks (vegan)
  • 1/4 cup almond butter

Instructions
 

  • In a food processor, combine the almonds, dates, coconut and salt for about 1 minute. Add half of the chocolate and pulse until mixed in.
  • Line a baking dish with parchment paper. Pour in the mixture and press down firmly and evenly.
  • Put the rest of the dark chocolate in a microwave-safe bowl. Microwave in 20 second intervals until melted, stirring after each interval. Stir in the almond butter.
  • Using a spatula, spread the chocolate/almond butter mixture evenly over the bars like icing. Cover the baking dish with plastic wrap and put in the fridge for 1 hour.
  • Remove the bars from the fridge and cut into 12 squares. Keep in an airtight container in a single layer or wrap individually and store in the fridge until ready to enjoy.
