I love meal prepping energy bites every week so I can snack on them when I have an attack of the sweet tooth (yes, it happens to me too)! The pistachios are rich in filling protein and fiber as well as healthy fats. About 90% of the fat in pistachios is in the form of monounsaturated and polyunsaturated fats. The satisfying trio of protein, fiber and fat means you’ll stay full longer when eating these chocolate pistachio truffles. Cravings, be gone!

Get a Food Processor – You’ll Love It

If you don’t have a food processor yet, trust me, it’s time to get one. I was a skeptic too because I don’t like buying kitchen gadgets that just end up gathering dust. But this is one cooking gizmo that’s worth every penny. I use it all the time to make hummus and other dips, nice cream, frozen yogurt, energy bites, falafels, marinades, salad dressing and so much more. The slicing attachment is awesome for making vegetable chips such as zucchini chips and sweet potato chips.

Seriously, it’s a food processor is the best investment ever. It will help you eat healthier, tastier meals and save you loads of prep time.

My first food processor was kind of flimsy so I finally upgraded and got my Breville Sous Chef Food Processor. I absolutely love it! It’s super powerful and intuitive to use. I keep it on my kitchen counter because it inspires me to create more delicious recipes.
