I’m a huge ice cream fan. It has to be at the top of my list for favorite indulgences. But clearly it’s not something I can get away with eating every day. That’s why I’m also an official nice cream enthusiast. You get the treat without loading up on calories, added sugar and saturated fat. My Neapolitan Nice Cream is a great way to have the delicious flavors of chocolate, vanilla and strawberry ice cream in nice cream form. That way it’s vegan, dairy-free, paleo and has no refined or added sugars.

How to Make Nice Cream
The basic recipe for nice cream is 2 frozen bananas and 1/2 cup of unsweetened almond milk. Just add these 2 ingredients to your food processor or a good blender and blend until smooth. If you have to add a bit more almond milk to keep things going, no worries. Go for it!
You should get nice cream that’s the consistency of soft serve ice cream. If you like harder ice cream that’s easier to scoop, feel free to put your nice cream into an air-tight container and pop it in the freezer for about 15 minutes or so. This will help your nice cream set.
Typically I’m diving in and eating my nice cream right away, but you can also make this ahead of time or in larger batches. All it takes is putting your nice cream into an airtight container and storing in the freezer. Remove it from the freezer about 20 minutes before you want to enjoy your nice cream to let it thaw long enough to be easy to scoop. Otherwise you’ll be chipping away at an ice block. Not so nice!
How to Make Vanilla, Chocolate and Strawberry Nice Cream
To make your nice cream into different flavors, it’s super easy. Usually all it takes is 1 ingredient because you already have the sweetness!
Vanilla Nice Cream
- Add 1 teaspoon of pure vanilla extract
Chocolate Nice Cream
- Add 1 teaspoon of cocoa powder or raw cacao powder
Strawberry Nice Cream
- Add 3 strawberries (fresh or frozen)

Neapolitan Nice Cream – Vegan, Dairy-Free, Paleo and No Refined Sugar!
When you’re making Neapolitan Nice Cream, it’s a good idea to move from lightest to darkest in color. That way you can do some minor rinsing of your blender or food processor without needing to take time to wash it.
So first, start with the vanilla nice cream because it’s neutral in color. Make the entire batch of nice cream and transfer two thirds of it into a covered container. Put that in the freezer while you work on your next flavor.
You’ll be left with a third of your nice cream in the container of your food processor or blender. Add the strawberries to it to make your strawberry nice cream. Take your nice cream container out of the freezer and push the vanilla flavor to the side. Add your strawberry next to it.
Rinse out your food processor or blender and put half of the vanilla nice cream in. Add your cocoa powder, puree, and you have instant chocolate nice cream! And trust me, it’s a bonafide ice cream craving buster!

- You'll be left with a third of your nice cream in the container of your food processor or blender. Add the strawberries to it to make your strawberry nice cream. Take your nice cream container out of the freezer and push the vanilla flavor to the side. Add your strawberry next to it.
- Rinse out your food processor or blender and put half of the remaining vanilla nice cream in. Add your cocoa powder, puree, and you have instant chocolate nice cream! Remove the nice cream container from your freezer, push the other 2 flavors to the side, and fill the gap with your chocolate nice cream. Put in the freezer for about 15 minutes to set.
- If you aren't eating this right away (or for some reason don't finish it all), cover and keep in the freezer for up to 2 weeks. Remove from the freezer 20 minutes before you want to have your nice cream.
