Not only does it taste great, but it also provides:

    • Protein Power! This meal is packed with 50 grams of muscle-building protein(research suggests 30 grams at each meal is an ideal amount for most of us to build/maintain muscle mass. Active/larger people will need more than this.)
    •  Almost 2x the vitamin A most people need in a day. Vitamin A is an antioxidant that is needed for a healthy immune system, cancer-fighting potential and to prevent macular degeneration (worsening eyesight due to aging)
    • More than 3x the vitamin C most of us need each day! Vitamin C is another antioxidant that helps protect against illness and infection and is needed for bone strength and collagen formation, which helps with beautiful skin and wound healing.

Red Kale Chicken Salad

This kale salad is what I would have for a single serving. It’s gonna be popular so four or triple as needed! Everyone has their own preference in terms of how much dressing they like on salad. I prefer to make a larger batch and use over a few days for lunches. Need more reasons to try this recipe? It’s quick and easy to make and tastes even better if you prep it the night before.

Ingredients
  

Red Kale Chicken Salad

  • 2 cups red kale chopped into ribbons
  • 1 chicken breast cooked, skinless, size of your palm
  • 1/2 large cucumber cut into match sticks
  • 1/2 red bell pepper cut into match sticks
  • 1 handful other Asian veg you have on hand bean sprouts, snow peas or water chestnuts work great!

Spicy Peanut Lime Dressing

  • 1/2 cup natural smooth peanut butter
  • 1 lime juiced
  • 1 clove garlic chopped fine or crushed with mortar and pestle
  • 2 tsp sodium-reduced soy sauce or tamari (choose tamari if gluten-free)
  • 2 tsp honey
  • 1/2 tsp red pepper flakes (optional)

Instructions
 

  • Place all dressing ingredients together in a bowl and whisk with a fork or place everything in a mason jar and shake it up, baby! The dressing will store in the fridge for 5 days.
  • Coat kale evenly with dressing and let sit for a few hours or overnight if possible. I’m never that organized so I just stir kale and dressing together and layer other ingredients on top! The kale will soften and other ingredients won’t get mushy.
  • Serve with extra dressing and top with crushed peanuts, red chilis, sesame seeds and cilantro if desired. Or keep it simple. Delicious either way!
