Roasted Brussels sprouts are one of my favourite snacks. Seriously, anyone who says they don’t like these nutrition superstars just hasn’t roasted them yet.
A pinch of salt and some olive oil and next thing you know, you’re eating sweet, crunchy, golden goodness that’s better than popcorn.
This month’s Recipe Redux challenge is all about tapas, and what better healthy bite to serve than some roasted Brussels sprouts? They go great alongside your other healthy bites like olives, seed crackers, chicken skewers, roasted chickpeas or my Finger Lickin’ Tofu Nuggets. Heaven!
