Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup almond flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/8 tsp salt
- 2 large eggs
- 1/8 tsp black pepper

- Preheat the oven to 350 degrees F. Cut the chicken breasts into long strips about 2 inches wide.
- In a medium bowl, combine the almond flour and all ingredients up to the salt and pepper. In a small bowl, crack the eggs and whisk with a fork. Cover a baking sheet with parchment paper or spray with olive oil.
- Dip each chicken strip in the egg and then dip in the almond coating. Place on the baking sheet so the strips aren't touching.
- Bake for about 20 minutes or until the strips turn golden brown. Test for doneness using a meat thermometer (should read 165 F).
- Serve with your favourite dipping sauce or hot sauce. Enjoy!
