Fried chicken is so darn good… well, taste wise, not health wise. Until now!
My healthier version of this comfort food favourite is baked, not fried, so you get all the deliciousness for less fat and fewer calories. You gotta try this healthier fried chicken!

Traditional fried chicken uses lots of white flour. To make these baked chicken thighs gluten-free and have some of the crunch and crispiness of fried versions that use corn flakes or panko bread crumbs, I used TERRA Chips. These aren’t your average chips; they’re a tasty multi-coloured blend of root vegetables such as taro, sweet potato, yuca, batata and parsnip.

Healthier Fried Chicken Battered in TERRA Chips – Gluten-Free!
Ready for a healthier take on fried chicken? Here is my baked version the whole family will enjoy!

- 8 boneless, skinless chicken thighs
- 1 egg
- 1/4 cup milk or almond milk (try Almond Dream enriched original almond milk) http://hain-celestial.ca/OurBrands/Dream/TetraPak/AlmondEnrichedOriginal
- 1/2 cup quinoa flour
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 3 cups Terra Chips (I used Sweets and Beets)
- 2 tbsp olive oil
- Preheat oven to 400°F. Line a baking sheet or glass baking dish with parchment paper or foil. Wash chicken, pat dry and set aside.
- In a medium bowl beat milk or almond milk and the eggs. In another medium bowl combine the quinoa flour, garlic powder, paprika and black pepper.
- Put the TERRA Chips in a large bowl. Using the bottom of a glass or mason jar, gently crush the chips into small pieces.
- Dip the chicken in the flour mixture, then the egg mixture and then in the TERRA Chips crust. Place on the lined baking sheet. Sprinkle each piece with olive oil.
- Bake the chicken for 35 minutes. Increase the heat to 450°F and bake for 15 more minutes.
- Serve with a mixed green salad or a healthier homemade coleslaw. Just mix a bag of shredded cabbage, carrots, kale and beets with a bit of Greek yogurt and apple cider vinegar, salt and pepper. Enjoy!

I’ve seen these in the chip isle, but haven’t built up the courage yet to buy them and try them! I bet those sweet potato ones would make great “nachos” topped with seasoned ground turkey, cheese and lettuce!
I’d like to make a layered casserole with layers of potatoes, crushed chips, then sliced carrots, spinach, another layer of chips and top with a layer of potatoes and a topping of crushed chips!

Oh my goodness this is genius – I love Terra Chips! And now my mind is racing with ALL the possibilities! They would fantastic crushed up and used as a topping for mac & cheese or any other type of casserole (a sweet potato casserole perhaps?!) or used as a replacement for breadcrumbs in veggie burgers or salmon burgers, or as a coating for sweet potato or zucchini fries! Ahh the list could go on and on!

I think crushed up Terra Chips would make a great topping for mac n cheese or any casserole that you want some crunch on. They would also make a fun crunchy pizza topping, and I bet you could incorporate them into granola bars or energy balls 🙂

Your fried chicken looks yummy! I still remember the first time I ate Terra Blues, it was at a marathon expo. They have a great taste and texture. I think the Spiced Sweets Terra Chips would taste good added to chocolate chip cookies. The crunchy texture would nice and the spice would balance well with the chocolate!
