Pizza party!!! Are there any two more beautiful words in the English language? But let’s say you want to create some paleo pizza crust or make it gluten free… what’s your usual tactic? Grind up some cauliflower with a ton of cheese and make a huge mess? Combine a bunch of different gluten free flours and hope for the best? Keep it healthy and simple with my Easy Paleo Pizza Crust made with butternut squash rounds!

Butternut squash isn’t just for the classic Butternut Squash Soup. Its sweet and rich earthy flavor pairs well in savory and sweet dishes and is perfect with vegan cheese, dairy cheese or goat cheese and fresh herbs. Sprinkle some fresh basil on top and you’ll be in food heaven!

These pizzas are gluten free and grain free thanks to the butternut squash crust. I also love that they’re super easy to make. No mixing and no need to add tons of cheese or other calorie-rich ingredients to your crust. They’re paleo and vegan or “pegan” too!

No need to get out the food processor either! Phew…

Another fun thing about these Butternut Squash Mini Pizzas: you can set this up as a fun family dinner or gathering with friends. Just lay out the butternut squash rounds and provide a variety of toppings so everyone can decorate their own pizzas. It’s so much fun!

What are your favorite pizza toppings…??

I love to load up on vegetables such as roasted red peppers, artichoke hearts, mushrooms and green peppers. For sauce, I alternate between classic tomato sauce, pesto and a sundried tomato infused olive oil that’s out of this world!

To keep your pizzas vegan, sprinkle with some vegan cheese or drizzle with olive oil and sprinkle with nutritional yeast and Italian herbs such as oregano and basil with a pinch of salt and pepper.

These butternut squash mini pizzas work well as an appetizer or main. I like to make up a bunch of them and bring them for lunch. Be prepared for some serious lunch envy from your coworkers!

  • Butternut squash is an excellent source of alpha and beta carotene. These antioxidants support your immune system and promote bone and eye health.
  • If you need even more reasons to love your squash, it may boost heart health by lowering cholesterol and thanks to its potassium content, help lower blood pressure. The antioxidant and anti-inflammatory compounds in squash also help protect your blood vessels and healthy cells.

Ingredients
Crust
  • 1 butternut squash
  • 1 tbsp olive oil
Toppings (choose any you like)
  • 1/4 cup crushed tomatoes (or pesto)
  • 1/4 cup cheese (vegan, cow, goat or sheep)
  • 1/2 cup vegetables (mushrooms, green peppers, cherry tomatoes, roasted red peppers, artichoke hearts, etc.)
  • Salt and pepper to taste
  • herbs (basil, oregano, thyme, red chili flakes)
Servings: mini pizzas
Units:
Instructions
  1. Preheat your oven to 400 degrees F. Line a baking sheet with foil or parchment paper.
  2. Peel the squash with a vegetable peeler. Cut off the stem half of the squash and slice it into 1/4 inch rounds. Place the rounds on your baking sheet.
  3. Take the bottom of the squash and slice it in half lengthwise. Scoop out the seeds. Put it on the tray with your pizzas. You might as well bake it to use in other recipes!
  4. Brush both sides of the squash with olive oil. Roast the squash for 20 minutes.
  5. Remove the squash from the oven, flip them over, and then put on your toppings. Return to the oven for another 20 minutes. Enjoy!
