Chia seeds were celebrated by the Aztecs for their medicinal properties. They help keep you satisfied because they are a great source of protein, linoleic and alpha-linolenic fatty acids and fibre. They also contain phenolic compounds with strong antioxidant properties.

This recipe will show you one way I love to incorporate them! Chia puddings are delicious and simple. Don’t be afraid to experiment with different types of milk, sweetener and toppings.

This super simple but satisfying treat is great for anyone with a big sweet tooth! Pop it in the fridge before bed to have it ready for the morning rush. Here I used unsweetened almond-coconut milk, but you can use what you have on hand. This recipe works great with soy milk, almond milk or even cashew milk! Top with your favourite combination of fruit, nuts, seeds or more coconut.

- 3 tbsp white chia seeds
- 1 tbsp coconut sugar or sweetener of your choice!
- 1 cup unsweetened almond-coconut milk
- 2 tbsp pomegranate arils
- 1 square dark chocolate (optional)
- Gather all the ingredients.
- Pour the chia seeds and coconut sugar into a small jar.
- Add in the almond-coconut milk. Then shake the jar vigorously.
- Place in the refrigerator for 5 hours or overnight.
- When ready to serve, top with pomegranate seeds. Grate chocolate over pudding if desired.

I love coconut chia pudding, and this is so perfect for the season with the addition of pomegranate and chocolate!
I can’t believe I’ve never made chia pudding! I keep meaning to and this is the nudge I needed. Yours looks delicious!
It’s always nice to have a simple, tasty way to approach an ingredient – especially when that ingredient isn’t exactly familiar to everyone! Pomegranate seeds are a great touch too, and a nice textural element.
