Not only is it a fave dish of mine, it was recently featured in Men’s Health as one of The 50 Healthiest Recipes Known to Man. Everything looks delicious and oh-so-healthy! (That’s what happens when you get foodie dietitians in the kitchen).
It’s less than 200 calories a serving (so you can double up with zero guilt) and freakin’ delicious! I made it for my boyfriend who wanted something low carb but tastes better than grabbing some Chinese or Thai fried rice takeout. Not an easy task! Happy to report he is obsessed with my take featuring cauliflower “rice”.
- 1/2 cup white balsamic vinegar
- 2 tbsp mesquite seasoning
- 2 tbsp garlic powder
- 1/2 cup salsa mild, medium or hot depending on how spicy you want it
- 2 lbs medium shrimp peeled and deveined
- 1 head cauliflower grated, large
- 4 scallions chopped
- 2 tbsp Lime juice
- 1/4 tsp salt to taste
- 1/4 tsp pepper to taste
- In a large saucepan over medium heat, warm the white balsamic vinegar, mesquite seasoning, garlic powder, and salsa. Let reduce by half.
- Add the shrimp and sauté for 5 minutes. Add the cauliflower “rice” and cook for another 5 minutes or until the shrimp has cooked through
- Top with scallions, lime juice, salt and pepper to taste. Enjoy!
