Warm baked apple with crunchy crumble topping is one of my favourite fall and winter desserts. I have plenty of healthier versions of apple crumble and berry crisp and thought I had this topic pretty much covered… Until one of my clients recently asked for a nut-free crumble recipe.

I had to admit… all of my crumble recipes are loaded with nuts! I also wanted to create a crumble that’s gluten-free and vegan for those with other allergies and special diets.
In my Apple Cranberry Crumble, I’ve changed it up the classic apple crumble by adding some complexity of flavour with the tartness of cranberries.
To get the crunchiness of crumble without any nuts, I’m using TERRA Chips. They’re gluten-free, non-GMO, trans fat free and made with expeller-pressed vegetable oil. As a dietitian, I get excited about the fact that TERRA Chips are a source of fibre!

Apple Cranberry Crumble – Nut Free, Gluten Free and Vegan!

- 3 apples sliced
- 1/2 cup cranberries fresh or frozen
- 1 orange zest and juice (about 2 tbsp juice)
- 1/2 tsp pure vanilla extract
- 2 tbsp arrowroot starch
- 1 cup TERRA Chip Blues crushed fine
- 1/2 cup gluten-free oats
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons coconut sugar (or sweetener of choice)
- 1/4 cup coconut oil softened
- Preheat the oven to 375 degrees F. Grease a 9x9" baking dish with coconut oil.
- In a large bowl, toss the filling ingredients together.
- In another large bowl, crush the chips by using the bottom of a mason jar. Or put them in a ziploc bag and crush them. In the large bowl, mix the ingredients for the crumble except the coconut oil. Using a fork or your hands, cut the coconut oil into the dry crumble until the mix is moistened throughout.
- Pour the filling into your baking dish. Spread the crumble evenly over the filling.
- Bake the crumble for 35 minutes. Cool 15 minutes. Cut and enjoy!
I love these chips! I never thought of using these chips to make something as delicious as an apple cranberry crumble… But I will try one day. Thanks for sharing 🙂
Although… if I had to create a recipe from it, I’d probably do something simple like eat them with a yummy dip or use the crumbs over a salad.
I feel it a bit of a crime to use Terra chips in other recipes, cause I love them just the way they are! But, since y’all want to be creative with it, I’d crumble them and coat them over egg-dipped-and-seasoned shrimp. I’d place them in the pan and let the oils (already in the chip crumble) cook the rest of the shrimp. Have it with your favourite dipping sauces!
Love these creative ideas. The idea of crumbling them to use instead of breadcrumbs is so appealing – I’m thinking using them to make crispy pan fried goat cheese rounds to use on a salad!
