Ingredients
  • 1 tbsp chia seeds
  • 3 tbsp water
  • 2 tbsp extra virgin coconut oil melted
  • 1/2 tbsp pure vanilla extract
  • 1 cup almond flour
  • 3/4 cup shredded coconut unsweetened
  • 1 tbsp cocoa powder
  • 1/2 tbsp cinnamon
  • 1/3 cup coconut sugar
  • 1/2 tsp Baking powder
  • 1/4 tsp salt

Instructions
  1. Preheat the oven to 375 degrees Fahrenheit. In a small bowl, mix the chia seeds with water and put in the fridge for about 10 minutes.
  2. Melt the coconut oil on the stovetop or in the microwave. Stir in the vanilla.
  3. In a large bowl, mix the remaining ingredients until combined. Add the wet ingredients (the chia/water mixture and coconut oil/vanilla mixture) and stir until combined.
  4. Line a couple of cookie sheets with parchment paper. Roll the dough into balls 2 inches in diameter. Press down flat using the bottom of a jar or mug.

  5. Bake for about 10 minutes or until the cookies develop golden brown colour on top.
  6. Cool and enjoy!
