Paleo Chicken Fingers

These paleo chicken fingers are gluten-free and kids love them! They're baked, not fried but still come out deliciously crispy and golden brown.

  • 2 boneless, skinless chicken breasts
  • 1/2 cup almond flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/8 tsp salt
  • 2 large eggs
  • 1/8 tsp black pepper


  • Preheat the oven to 350 degrees F. Cut the chicken breasts into long strips about 2 inches wide.
  • In a medium bowl, combine the almond flour and all ingredients up to the salt and pepper. In a small bowl, crack the eggs and whisk with a fork. Cover a baking sheet with parchment paper or spray with olive oil.
  • Dip each chicken strip in the egg and then dip in the almond coating. Place on the baking sheet so the strips aren't touching.
  • Bake for about 20 minutes or until the strips turn golden brown. Test for doneness using a meat thermometer (should read 165 F).
  • Serve with your favourite dipping sauce or hot sauce. Enjoy!
