Mediterranean Pasta Salad with Fresh Herbs

This Mediterranean Pasta Salad tastes like a comforting classic (but is much healthier). It’s loaded with veggies and fits perfectly into your healthy picnic plate! Not to mention, it’s super quick and easy to make. It can be gluten-free if you choose gluten-free pasta.
Servings 4


  • 2 cups pasta whole grain
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives chopped
  • 1/4 cup red onion minced
  • 1/2 cup feta cheese crumbled
  • 2 tbsp fresh basil chopped
  • 1 tbsp fresh mint chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 1 tbsp lemon juice
  • salt and pepper to taste


  • Cook pasta according to package directions. Drain, rinse quickly with cold water, and transfer to a large bowl.
  • Add the cucumber, tomatoes, olives, red onion, feta, and basil, and toss to combine.
  • In a small jar or bowl, combine the olive oil, vinegar, lemon juice, and a pinch of salt and pepper. Shake or stir to combine.
  • Drizzle the dressing over the pasta mixture, toss to coat, and serve or store in the refrigerator or in a cooler bag with ice packs until ready to serve. Enjoy!
