Berry Crumble Pie – vegan and gluten-free

The long weekend is almost here! That means patio time, backyard barbecuing and picnics galore. Need a healthy no-fuss dessert to please a crowd? Try my delicious Berry Crumble Pie! It’s vegan and gluten-free.

This Berry Crumble Pie is super easy to make and stores and freezes well too. Thanks to the natural sweetness of the berries, you don’t need to add much to sweeten it… just a bit of maple syrup and you’re good to go!

Use your favourite berries whether they’re fresh or frozen for an antioxidant boost!

This dessert features the goodness of oats for it’s crunchy base and top layers (“the crust” if you will). If you’re gluten-free,  make sure you use gluten-free oats (for people with Celiac disease, cross-contamination with gluten needs to be avoided and oats are often processed in facilities that process wheat and other gluten-containing foods).

Oats contain a type of fibre called beta-glucan that has been shown to lower “lousy” LDL cholesterol levels. High LDL levels are associated with a higher risk of heart disease.

In cell studies, beta-glucan activated cancer-fighting cells such as T-cells and natural killer cells. In animal studies, beta-glucan was shown to prevent cancer cells from growing.

Oats are also an excellent source of thiamin, a B vitamin needed for a strong immune system and to turn carbohydrates into energy.

Berry Crumble Pie - vegan and gluten-free

This delicious Berry Crumble Pie is easy to make and so delicious! It also happens to be vegan and gluten-free. Thanks to the natural sweetness of the berries, you don't need to add much to sweeten it... just a bit of maple syrup and you're good to go!

Ingredients
  

  • 2 cups mixed berries fresh or frozen
  • 2 tsp arrowroot powder
  • 1 cup almond flour
  • 1 cup oats large flake
  • 2 tsp cinnamon
  • 1 tsp Baking powder
  • 1/4 tsp salt
  • 3 tbsp maple syrup
  • 1/4 cup coconut oil

Instructions
 

  • Preheat the oven to 350 degrees F.
  • If using frozen berries, defrost in the fridge or on the stovetop or microwave.
  • In a medium bowl, combine the berries and arrowroot powder.
  • In a large bowl, mix together all ingredients from almond flour to the salt. Add the maple syrup and the coconut oil and stir together. Using clean hands, squeeze the mixture into clumps.
  • Grease a 9 inch pie plate with a bit of coconut oil. Pour in half of the almond/oat crust and pour the berry filling over top. Sprinkle the remaining almond/oat crust on top and press down to form a pie (if you'd rather make bars, use a square pan).
  • Bake for 20 minutes and then cover with foil. Bake for another 20 minutes or until the crust is golden brown and the filling is boiling.
  • Let cool before slicing and serving. Enjoy!

Notes

You can make it in a pie plate or if you'd rather bars or traditional crumble, use a rectangular baking dish.
