Almond Cocoa Macaroons

These gluten-free, vegan, lower carb cookies are super easy and delicious! They're so healthy you can have them as a dessert or even a snack.

Ingredients
  

  • 1 tbsp chia seeds
  • 3 tbsp water
  • 2 tbsp extra virgin coconut oil melted
  • 1/2 tbsp pure vanilla extract
  • 1 cup almond flour
  • 3/4 cup shredded coconut unsweetened
  • 1 tbsp cocoa powder
  • 1/2 tbsp cinnamon
  • 1/3 cup coconut sugar
  • 1/2 tsp Baking powder
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit. In a small bowl, mix the chia seeds with water and put in the fridge for about 10 minutes.
  • Melt the coconut oil on the stovetop or in the microwave. Stir in the vanilla.
  • In a large bowl, mix the remaining ingredients until combined. Add the wet ingredients (the chia/water mixture and coconut oil/vanilla mixture) and stir until combined.
  • Line a couple of cookie sheets with parchment paper. Roll the dough into balls 2 inches in diameter. Press down flat using the bottom of a jar or mug.
  • Bake for about 10 minutes or until the cookies develop golden brown colour on top.
  • Cool and enjoy!
