Almond Cocoa Macaroons

Almond Cocoa Macaroons
These gluten-free, vegan, lower carb cookies are super easy and delicious! They're so healthy you can have them as a dessert or even a snack.
Ingredients
- 1 tbsp chia seeds
- 3 tbsp water
- 2 tbsp extra virgin coconut oil melted
- 1/2 tbsp pure vanilla extract
- 1 cup almond flour
- 3/4 cup shredded coconut unsweetened
- 1 tbsp cocoa powder
- 1/2 tbsp cinnamon
- 1/3 cup coconut sugar
- 1/2 tsp Baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 375 degrees Fahrenheit. In a small bowl, mix the chia seeds with water and put in the fridge for about 10 minutes.
- Melt the coconut oil on the stovetop or in the microwave. Stir in the vanilla.
- In a large bowl, mix the remaining ingredients until combined. Add the wet ingredients (the chia/water mixture and coconut oil/vanilla mixture) and stir until combined.
- Line a couple of cookie sheets with parchment paper. Roll the dough into balls 2 inches in diameter. Press down flat using the bottom of a jar or mug.
- Bake for about 10 minutes or until the cookies develop golden brown colour on top.
- Cool and enjoy!
