These No-Bake Lentil Energy Bars are not only delicious, they’re vegan and gluten-free. I wanted to work in some extra fiber and protein to keep you feeling full longer, so I added lentils as a sneak attack superfood ingredient! These bars are soft like a brownie but have no added sugar or refined sugar and are loaded with nutrients!

The people of spoken. All reign the ultimate in healthy comfort food makeovers: my ooey gooey Zucchini Lasagna! By swapping out the usual noodles with zucchini slices, you make this all time favorite low carb, gluten-free and lower in calories than the original.

My skinny lasagna also swaps out beef for extra lean ground chicken and ricotta cheese for low fat cottage cheese. You’re basically chowing down on lean protein and veggies but all your senses are thinking, “This is wayyyyy too gloriously good to be healthy!” Well eat up, because it is!
