I love to make big batches of pancakes on weekends and then enjoy them as a quick and easy breakfast during the week. Who doesn’t love diving into a stack of healthy pancakes on a Monday morning? What a super way to start your week 🙂

I’ve also been known to pull a baggie or container of protein pancakes out of my purse for a quick snack during the day. Who says you can’t have pancakes at 3pm???

Kitchen Tools You Need For Easy Pancakes

Sure, you can always make your pancakes by mashing the banana and eggs together in a bowl using a fork. That counts as an arm workout as far as I’m concerned… but personally I don’t like big banana bits in my pancakes. I’m picky like that.

My favorite way to make my pancake batter is to throw my ingredients into my blender and let it do the work. That way you get smooth pancake batter with no big bits. Gotta love it.

The other awesome part about making pancakes in your blender is you literally pour the batter right into the pan. So much control and way less mess. I’m all about doing fewer dishes!

Health Benefits of Eggs

Protein

  • Eggs are an excellent source of high quality protein to help you build muscle and keep you feeling full longer. A large egg has 6 grams of protein. Protein also helps prevent muscle loss if you’re trying to lose weight, boosts healing and is needed for a strong immune system. Kerpow!

Iron and Vitamin B12

  • Eggs contain iron and vitamin B12, nutrients that are needed for red blood cell formation.

Vitamin D

  • Eggs (the yolks, specifically) one of the few food sources of vitamin D.
  • Although our bodies produce vitamin D when we spend time in the sun, in Canada and other countries in the northern latitudes we may need additional vitamin D for bone health and to fight cancer. There is some debate over how much vitamin D we need in a day, but we shouldn’t have more than 4000 international units (IU) per day. This is important to know if you are taking vitamin D supplements.

  • Eggs contain a nutrient called choline that is essential for the brain to be able to send messages to your muscles.

I love to top my 2 ingredient protein pancakes (all pancakes, really) with some mixed frozen berries I heat up in a pan. That way I get not only the berry goodness and fiber, but plenty of naturally sweet sauce to pour over my pancakes. #Winning.

My latest obsession is sprinkling unsweetened shredded coconut over my pancakes.

2 Ingredient Protein Pancakes - Gluten Free, Paleo

These 2 ingredient protein pancakes feature healthy, wholesome eggs and bananas. That's it, that's all. These yummy and super-easy pancakes are gluten-free and paleo and have no added sugar.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients
  

  • 4 bananas peeled and broken into chunks
  • 4 eggs
  • 1 tbsp coconut oil (optional, for frying)

Instructions
 

  • Add the 3 ingredients to your blender. Blend until smooth.
  • Put your non-stick frying pan over medium heat or heat up a bit of the coconut oil. Pour your batter into the pan making 4 even pancakes. Your pancakes are ready when they are golden brown on both sides.
  • Continue to cook your pancakes in batches. Serve with fresh or frozen berries (warmed in your pan) and a sprinkle of unsweetened shredded coconut if desired. Enjoy!
